Loss of weight for a vegan?

I have a little extra weight is extremely stubborn, and I would like my body is more toned and defined. I run every day from 3 to 6 miles. I still have more weight than I have to lose, and my body has absolutely no definition. It's frustrating to me because I work so hard, and I see these results, small gradual. I am aware that I should incorporate some type of strength training into my routine, such as Pilates. So I think I'll try that, 3 days per week, and continue with my daily running as well. But I was wondering if maybe my diet was the culprit. I eat really well. Recently I decided to go Vegan, having been a vegetarian for some time. I heard that not eating enough calories may contribute to a plateau in weight loss … any information on this subject? I cut my calories for last year. I saw the weight loss at first, but for months I have been blocked. I do not know what to do!
