How to Handle Snack Attacks on the Paleo Diet

Snacks are part of life and on any healthy diet you are told to eat something every few hours. This is very true if you are following the Paleo Diet. The problem is finding out what to snack on. You need to have snacks that are quick and easy to prepare and that fit in with the principles of the Paleo diet.

One easy snack to prepare in advance is sliced vegetables. This can include celery sticks, carrot sticks, cucumbers, radishes and cherry tomatoes. Plus you can serve it with a low calorie dip or dressing. This type of snack is perfect for when you are at home on the weekend. Or it can be prepared ahead of time and packed for work or school.

Eggs are another suitable snack choice for anyone on the Paleo Diet. You can prepare them as hard boiled eggs, slices of frittata or as egg muffins.

Fruit is a quick and simple snack to prepare. Choose berries, slices of oranges, apples and grapefruit. These are easy to pack if you need to take your snack with you as well.

Small amounts of nuts and seeds can be packed into small containers and popped into your bag. They are easy to eat no matter where you are plus full of nutrients that help you get through a busy morning. As nuts are higher in calories it may be best to eat them as a mid morning snack. By eating nuts early in the day your body has lots of time to burn off the calories.

Leftover pieces of meat or seafood are wonderful snack choices. Just dice them up into chunks the night before and place them into a small container. By eating leftover meat you are adding protein to your diet which will provide you with energy during the day.

Chicken or turkey breast diced or sliced makes a good snack choice. So does canned tuna, peeled shrimp and slices of leftover meatloaf or meatballs.

When having vegetables or meat as a snack it is nice to eat them with a dipping sauce. Some good sauces to use that won’t affect your Paleo Diet are salsa, nut butters, pesto sauces and guacamole.

Once you get into the habit of making snacks that fall in line with the Paleo Diet principles you won’t be lost for what to eat. Instead you will have tons of choices which are healthy and taste wonderful.

Remember eating snacks is a good healthy choice and you should try not to go more than 4 hours without having some sort of snack. Now you won’t have to worry about what snack to make.

Sweet Potato Love

I’m so in love with this dinner. It’s making me feel nourished, satisfied and happy this evening. Half of the plate was covered in a mixed green salad with cauliflower, boiled egg, cucumber, cherry tomatoes, green onions, purple cabbage, chopped bacon and homemade croutons. I made another creamy dressing, which was so easy, it’s ridiculous that I haven’t made creamy dressings at home before.

I placed about 4 T mayonnaise in a small jar with 1/3 C milk, about 1/4 (or more to taste) salt, dill, garlic powder, and cayenne. Place lid on jar and shake. The result is a very thin and flavorful dressing. A little goes a long way.

The shrimp was tossed in cajun seasoning and cooked in the skillet with a little olive oil and butter. The sweet potatoes were tossed with about 1 T. leftover bacon grease, sea salt, garlic and cayenne. They were roasted at 425 degrees for  20 minutes. They were fantastic. I think I prefer savory sweet potatoes so much more than sweetened ones.

Oh! Thank you guys for the exercise recommendations here and on facebook today. I pulled out my resistance bands and did a lot of arm and leg work. I’m already starting to feel sore!

We’re experiencing some major wind and below zero temperatures tonight! Time to break out my quilt and boil water for a mug of tea.

I’m going to go ahead and congratulate myself again for prepping vegetables last night. It was late, I was tried and so ready for bed, but I convinced myself to cut up all the vegetables anyway. Thank you self. I was able to throw this salad together in about five minutes. Spinach, cherry tomatoes, red cabbage, green onions, cauliflower, monterey jack, cucumber, one egg and couple of pan-fried slices of polenta.

And then the dressing, oh the dressing. Let me just come clean once and for all: I’m a creamy dressing person. Blame it on my West Virginia upbringing if you will, but I love ranch dressing. That love runs deep. And while I do like the occasional homemade vingrette, my heart and soul truly wants creamy dressing. And because I don’t always have ranch on hand, this is a good thing, I decided to make something up.

Creamy Salsa Dressing

1 T sour cream, 1/2 T mayonnaise, and 2-3 T homemade salsa. Mix it up, toss it with your fixings and behold, a better alternative to ranch. I love it so much that I could dedicate myself to a salad every single day.

I also had a serving of trail mix for a snack. Trail mix is hilarious. Have you seen what a serving looks like?

This was my first time cooking with pre-made polenta and I really enjoyed the added texture and flavor in my salad. I have a whole polenta log left, any idea as to what I should make with it?
