Token Fat Girl Cook Along

I’ve been wanting to do some sort of a cook along for a very long time, and just never knew how to go about doing it. Basically, I think cooking is fun and hope you do too (at least a little!) and I would love to get in the kitchen with you guys a couple times a month.

Here’s my idea: I will pick a recipe to start (down the road I am happy to take suggestions!) as an assignment. We will have one week to complete the recipe and then post (with photos) our results on the same day.

To make the recipe a little more fun I will post a challenge for the recipe such as: you must use an artichoke in your recipe, or use one local ingredient, or it must be made bento-box style. I encourage us all to make the recipe your own and find ways to make it work individually. For example: making it vegan, gluten-free, made with whole wheat pasta, make it miniature, deconstructed, change the filling, make it low calorie etc.

All you have to do is leave a comment in this post letting me know you’re in and I will link to your blog on reveal day!

Our first assignment begins Thursday January 20th, making the following Thursday (the 27th) reveal day! You can make the recipe at any time during the week, just make sure you schedule your post for Thursday.

Diet Food vs. Health Food

I’m here! I made it all the way to Wednesday without blogging, yet I’ve had so much to share. I started Insanity again with Josh. We started last year and made it all the way to day four and then I got sick and then we never did it again.

We started Monday evening with the fitness test, which was not easy, but I was a little excited to see that my numbers in some areas were high than others. They provide you with a little 60-day calendar to check off each day that you complete a new session so it’s really satisfying to cross off each completed day.

I’m very sore, but I feel so good to exercise in the morning, it really sets the tone for the day.

So that brings me to my next topic. Food. I’ve been doing really well with tracking my food and making an effort to cook at home and eat vegetables and fruits. I spent a good chunk of the weekend and last week cooking and trying out new recipes that I hope to share this week.

I’ve been thinking a lot about “diet food” and I realized that I hate diet food, but I love health food. To me diet food is anything in a package that has a weight-loss claim (low fat! low calorie! low carb! lose 6 pounds in 2 weeks!). Diet soda, bars, shakes, cookies, crackers, margarine, cereal etc.

Today I had a salad for lunch that I would call health food, not diet food. This is food that sustains and satisfies me. It leaves me feeling emotionally and physically good. It is delicious, and doesn’t have a lot of calories. 400 to be exact.

Okay, yes it looks dressing heavy! Here is the run down of my salad:

organic/local mixed greens, local feta, organic bacon, 2 local hard boiled eggs, 1 T slices almonds, and 2 T yogurt dressing.

But it’s not just about salads, it’s about wholesome food that we make with our own hands. It doesn’t have big claims. The lettuce didn’t promise I’d lose weight on the package. Nor did the eggs, cheese, or bacon. It just is. And it’s good.

That was a lesson a learned today.

Weekend Success

I’m up today and full of energy to get stuff done and prepare for a new week! Thank you so, so much again for your comments- there are some truly wonderful (intelligent, kind, thoughtful) people reading this blog and I’m so grateful for that. Truly thankful.

It’s Saturday morning and I don’t have a big post planned, but I have so much I want to do and want to share for a little bit of accountability.

Today I’m going to a seminar about local bee’s with a friend and then going to her house after. This will include a little bit of bridal shower planning that I’ve got going on.

But before that, I want to really get a lot done in the kitchen. My goal is to create an environment for weight loss success. This will involve cabinet organizing, and food prep. I dream of being able to reach in the refrigerator and have lots of fixings for a salad at my finger tips.

Todays exercise will involve a visit with Billy Blanks and tomorrow we’re headed to the gym for strength and the treadmill.

I want to do some menu planning for the week, some bread baking. I want a meal plan for the week and I want to make it as easy as possible for myself.

I want to start organizing the bedroom and start garden planning. Yes folks, this year (like the past two years) I’m going to have a successful garden. I will have a garden. I’m saying this over and over. I have NO idea how to garden and this is always so scary for me. I want to top this off by saying that I live in a town and I don’t have a lot of yard space for such adventures. BUT, we do have small spaces that can be turned into a garden. Urban gardening in a small town. I want to do this for the food, but also for the exercise and the feeling of making it happen. Eating food that we grew, there is some sort of satisfaction in that. So planning is happening. Planning and learning.

What else? I have some freelance work to finish, and some jewelry orders to get out. Other than that I want to catch up my reading, and relax a little too.
