PB and J Oatmeal

As soon as I woke up this morning I ate half of a banana and 1 C of Uncle Matt’s orange juice. I was feeling the need to eat very lightly and keep heavy foods out of my system. 165 calories

Around 11am I got hungry again and was in the mood for a bowl of oatmeal. 1/2 C. plain oatmeal, 1/2 C. whole milk, water (to thin it out), 1 T homemade peanut/almond/cashew butter, 1 T all-fruit jam, about eight peanuts on top. 380 calories

After breakfast I enjoyed an Arbonne Antioxidant Immunity Booster sent to me from my friend Claire. She also sent me a bunch of other Arbonne products to try out- my skin is thanking her for that! 40 calories

I didn’t get hungry again until well into the evening. I started making a quiche for dinner with a nice salad around 7pm.

The quiche was easy to throw together- 1 package frozen broccoli (steamed), 1 frozen deep-dish pie crust, 2 oz. cheddar cheese, 6 eggs, 1/2 C. whole milk, salt and pepper. Bake at 375 degrees for 45-50 minutes. 288 calories per slice (I had 1.5 slices at about 400 calories)

Mixed greens salad with cucumbers, tomatoes, 1/2 avocado, sprinkling of feta and vinaigrette dressing. 210 calories.

I also ate 3 glucosamine chews- not shown- 70 calories

Total Calories: 1,265

Exercise: 45 minutes of Insanity Workout, burned about 400 calories

Pepper Steak Over Rice

Last night’s dinner is one of my favorites! I use the sauce from PW’s recipe and marinate with (ribbye) steak. I cook the peppers and onions in 1T sesame oil until tender. Remove from pan. Add steak + sauce to skillet with 1 C. chicken broth (low sodium) and let cook until meat is done. Add vegetables back in. Cook for about 5 minutes. Serve over rice. (Oh! I also use white wine instead of sherry.)

It tastes just like it’s from a chinese restaurant, but a lot better. I calculated the pepper steak alone at about 350 calories per serving (makes 4 total) plus 160 for 3/4 C rice. Served with salad and viniagrette dressing a a little feta; Total calories: 580

For the day: 1,690

I did not earn my sticker yesterday because I didn’t exercise. After dinner, I worked on more projects and just passed out in the bed. I know. Today I am going to exercise before dinner. I notice that exercise really helps me with depression, I feel so much better and clear after a workout.

I’m feeling dehydrated so far today and am working on lowering my sodium intake for the day. So far I’ve only had 1/2 a banana and 1 C of orange juice, plus lots of water.

Life Well Laughed

Breakfast held me over until about 2pm. For a split second I considered going out for lunch, but quickly realized that I could eat something a lot better from home. I’m glad I went home because I forgot about the two bags of croissants and Polinesian chicken salad in the refrigerator.

So that was lunch, and it was delicious. If you’re a fan of chicken salad, you can find the recipe here. I love chicken salad; top 20 favorite food item for sure. I estimated about 500-550 calories for the sandwich.

I chose the queso fresco and chipotle cheese, a new one to me and it was pretty good. I enjoyed the creamy texture and smoky/spicy flavor. I’m already coming up with ideas for it. My snack was 100 calories- 35 for the cheese and and 65 for the rice and nut crackers.

I’m making an effort to drink lots of water today. I can’t seem to get enough.

Going to do Insanity soon, today is pure cardio (one of the hardest sessions- hoping to burn 400-500 calories) and planning some steak stir-fry with peppers over rice and a salad for dinner.
