Power Oatmeal

I’ve been eating this oatmeal off and on for about three weeks now. I love oatmeal in the morning, because it’s so darn filling, but my previous recipe called for brown sugar. And because eating unsweetened oatmeal would leave me feeling like Oliver Twist, I decided to add a banana and some raisins.

I call this Power Oatmeal because it makes me feel powerful and because it features Zenergy Powerballs. Powerballs people, powerballs!

Okay…here’s how I make my oatmeal:

1/2 C old fashioned oats and 1 C. unsweetened vanilla almond milk

Add to a saucepan. And hey, as I was snapping up photos this morning I realized that my breakfast features not one, but three christmas gifts! Here you will find a stainless steel, copper rimmed pot from my sister. Thanks sister!

Using this rad bird bowl from my mom!

Once the oatmeal starts boiling add one chopped up banana and 1/8 C raisins. Stir. Let cook for another two minutes. My trick to perfect oatmeal is to take it off the heat before you think it looks done. Oatmeal will continue to cook in your bowl, so if you take it off the heat when it’s still runny it will firm up to the perfect (not dry) consistency. I learned this the hard way. I always thought I couldn’t make oatmeal until I did this.

I put a powerball in the microwave for about 15 seconds to soften (this probably isn’t recommended, but I’m a rule breaker). I really like the almond and coconut flavors the best. They are filled with natural stuff like dates, almonds, and cacao nibs, which I enjoy a lot.

Here’s the powerball! These were sent to me by the owner of the company Peggy Sue Honeyman Scott (try saying that ten times fast). What I like about her is that she is hands-on with the promotion of her company. She contacted me personally back in November and even included a nice little note with her Zenergy Powerballs. I like that, I like personal. And I like these powerballs in my oatmeal.

Top with a little shredded, unsweetened coconut if that’s your thing.

And enjoy with a nice glass of grapefruit juice in your special Floyd stem wear. Another Christmas gift from my sister in law. Which is proof that if you give me a gift I will actually use it…a lot.

So because Peggy Sue is so awesome she agreed to send one of my readers a sampling of her Zenergy Powerballs, which honestly make a great breakfast by themselves or snack. I’ve been known to eat one while making dinner.

Just leave a comment and I’ll draw a name at random and have them send out to you!

Sugar-Free Banana Chocolate Cheesecake

Guess what? I had dessert for lunch. Guess what else? There was no sugar or artificial sweeteners involved. And it was delicious. From one sweet tooth to another, make this recipe asap.

I’ve had this idea in my head since before I started my year without sugar and I finally got around to making it happen today. Here’s how you make it:

Sugar-free and naturally sweetened: Banana Chocolate Cheesecake

Ingredients:

Crust:

1/2 C. whole pitted dates

1/2 C. pecan halves (or any other nut)

splash of vanilla

1/2 t. water

! T. cocoa powder

optional: 1 T. unsweetened coconut flakes

Filling:

8 oz. cream cheese softened

1 very ripe banana, mine was black (I would use two next time)

1/4 C cocoa powder

3/4 C full-fat plain yogurt

1/2 C. Dates

1/2. C water

Optional topping: unsweetened coconut

What you will need: food processor, 9 inch pie plate, small saucepan, mixer, spoons

Directions:

Starting with your crust, dump all ingredients (dates, pecans, vanilla, water) into a food processor. Turn machine on for at least two minutes. Your crust is done when you can form a ball with your ingredients.

Press crust into a pie plate with your hands. Your crust will cover the bottom of the plate and a little on the sides. You can make it as thin or thick as you like. Set crust aside.

Use a stand-mixer or hand-mixer for the filling. Beat the cream cheese and banana together on low until smooth. Add the cocoa powder and vanilla and mix again until the ingredients are incorporated and smooth. Set mixture aside.

Put dates in your food processor and pulse until finely chopped. Add chopped dates to a small saucepan with 1/2 C. water. Turn heat to medium high and stir until the water begins to boil. Turn heat down and let simmer for five minutes. Take off heat and let cool to touch. Add dates to food processor, turn machine on for two minutes.

Add date puree to cream cheese mixture and beat until smooth. Pour filling over crust and refrigerate for at least one hour.

Makes 8 servings.

PS: I’ve been using the hamilton beach food processor for four years now and love it!

Mashed Potatoes

Mashed potatoes are a basic, filling dish, but still extremely tasty. They can be served in lots  of alternatives and even the leftovers can be used up.

Ingredients: Depending on your appetite, use about 2 medium potatoes for each person. You will also need salt and pepper to taste, a knob of butter and a little milk.

Method: Peel the potatoes, and cut them into slices. Put them in cold water until you are ready to use them. Drain off the cold water, put the pieces in a saucepan and cover them with boiling water. Bring the water back to the boil, reduce the heat and simmer until the potato slices are cooked. (They will be tender when tested about 5 – 10 minutes.) To test if  the potatoes are cooked – use a fork. It should meet no resistance going into the potato  slice. If there is resistance, or the potato tries to grip onto the fork – cook a little longer. Drain the water off the potato slices and put the pan back on the hob at the lowest  temperature, just to dry the potatoes a little. Mash the potatoes (use a potato masher, or a fork) and add the salt, pepper, butter and milk. Mash until smooth. Use alongside your normal meal or even eat them by themselves.
