PB and J Oatmeal

As soon as I woke up this morning I ate half of a banana and 1 C of Uncle Matt’s orange juice. I was feeling the need to eat very lightly and keep heavy foods out of my system. 165 calories

Around 11am I got hungry again and was in the mood for a bowl of oatmeal. 1/2 C. plain oatmeal, 1/2 C. whole milk, water (to thin it out), 1 T homemade peanut/almond/cashew butter, 1 T all-fruit jam, about eight peanuts on top. 380 calories

After breakfast I enjoyed an Arbonne Antioxidant Immunity Booster sent to me from my friend Claire. She also sent me a bunch of other Arbonne products to try out- my skin is thanking her for that! 40 calories

I didn’t get hungry again until well into the evening. I started making a quiche for dinner with a nice salad around 7pm.

The quiche was easy to throw together- 1 package frozen broccoli (steamed), 1 frozen deep-dish pie crust, 2 oz. cheddar cheese, 6 eggs, 1/2 C. whole milk, salt and pepper. Bake at 375 degrees for 45-50 minutes. 288 calories per slice (I had 1.5 slices at about 400 calories)

Mixed greens salad with cucumbers, tomatoes, 1/2 avocado, sprinkling of feta and vinaigrette dressing. 210 calories.

I also ate 3 glucosamine chews- not shown- 70 calories

Total Calories: 1,265

Exercise: 45 minutes of Insanity Workout, burned about 400 calories

Token Fat Girl Cook Along: Gyros

Welcome to the second installment of the Token Fat Girl Cook Along! This week we made gyros. And the challenge was to make one ingredient from scratch. The typically gyro consists of meat, such as chicken, beef or lamb, tzatziki sauce (yogurt with cucumbers and dill), and pita. The rest is up to you.

I really cut it close this week with my gyro making them last night and finding myself at the grocery store around 8pm. The gyros were served around 10pm last night so my challenge was making gyros with meat and yogurt sauce from scratch in a limited amount of time.

I couldn’t find a lot of lamb and I am weird about buying ground meat from chain grocery stores so I decided to buy lamb chops and steaks instead. I knew that I would have to puree the meat anyway and figured I could skip having ground meat.

I used this recipe as a base. But skipped all of the refrigeration. I placed the meat (pulled from bone) into the food processor with four slices of thick-cut bacon, 1 medium yellow onlion, marjoram, oregano, salt and pepper. Processed until it became a puree. Which honestly, is kinda gross looking.

I spread the meat puree into a bread dish and baked at 350 degrees for about an hour. During that hour I would take the meat log out and drain the fat. I did that about three times.

Once the log is done, let it sit for about 10 minutes before cutting into thin slices. I then browned these slices on the skillet. I found the slicing part difficult as the meat was falling apart.

On to the tzatziki sauce. This was another area of short cuts for me. I could not find plan unflavored greek yogurt at my local grocery store. Nor could I find plan full fat yogurt. How annoying is that? My local Food Lion has about a million flavors of crap-tastic chemical yogurt, but not one container of full fat yogurt. I remembered that I had some plain full fat yogurt at home, at least a cup left and some cream-top sour cream and decided to make that work.

I didn’t have time to strain the yogurt, so I just left it as is. 1 C full fat yogurt, 3/4 C full fat sour cream, 1/2 t (plus more to taste) garlic powder, 1-2 T lemon juice, fresh dill, chopped english cucumbers and salt and pepper. This came out delicious. I’ve made tzatziki sauce many times before and found this just as refreshing.

Finished gyro! The verdict? Delicious! Josh really liked it a lot too. I am not set on this being the best gyro meat recipe. It was great with everything, but not flavorful enough on it’s own. I liked it though. The process grossed me out a lot. I think I’d like to try this with a rotisserie oven next time.

I’m also pleased with how good it was on less time. I skipped a ton of steps and the results did not suffer. This could easily be made on a regular week night in about an hour.

To make the recipe a little more fun I will post a challenge for the recipe such as: you must use an artichoke in your recipe, or use one local ingredient, or it must be made bento-box style. I encourage us all to make the recipe your own and find ways to make it work individually. For example: making it vegan, gluten-free, made with whole wheat pasta, make it miniature, deconstructed, change the filling, make it low calorie etc.

All you have to do is leave a comment in this post letting me know you’re in and I will link to your blog on reveal day!

Our  assignment begins Thursday January 27th, making the following Thursday (the 3rd) is reveal day! You can make the recipe at any time during the week, just make sure you schedule your post for Thursday.

Cooking Made Easy

A lot of individuals nowadays don’t like to cook. Sometimes it appears less complicated just to eat out every night, because of so many take-out shops available or to simply pop a little something in the stove because  there are so many ready dishes available.

And yet have you any idea what is in those meals you might be getting from the shop? Or even precisely what is incorporated in the  take-aways that your family are consuming? Would you have any idea just how much it’s costing  you?

It may be hard, from time to time to get the time to cook or to choose what to put together, that is appealing and also nutritious and easy. But you will find  many very easy, nutritious dishes to choose from that you can experiment with on your household. Many simple ingredients can quickly and easily be turned into delicious wholesome food. Also , they are cheaper than eating out or perhaps buying fast food or perhaps ready dishes. And if you are  worried because of the washing up- there is hardly any!

Why not have a shot at a simple dish together with your next takeaway, simply to discover how uncomplicated it can be?And if you want to encourage yourself to accomplish something, be it  to prepare dinner on a regular basis or perhaps to develop some other good practice- check outFreedup to find ways of getting oneself  to do what you want to attain.

Mashed Potatoes

Mashed potatoes are a basic, filling dish, but still extremely tasty. They can be served in lots  of alternatives and even the leftovers can be used up.

Ingredients: Depending on your appetite, use about 2 medium potatoes for each person. You will also need salt and pepper to taste, a knob of butter and a little milk.

Method: Peel the potatoes, and cut them into slices. Put them in cold water until you are ready to use them. Drain off the cold water, put the pieces in a saucepan and cover them with boiling water. Bring the water back to the boil, reduce the heat and simmer until the potato slices are cooked. (They will be tender when tested about 5 – 10 minutes.) To test if  the potatoes are cooked – use a fork. It should meet no resistance going into the potato  slice. If there is resistance, or the potato tries to grip onto the fork – cook a little longer. Drain the water off the potato slices and put the pan back on the hob at the lowest  temperature, just to dry the potatoes a little. Mash the potatoes (use a potato masher, or a fork) and add the salt, pepper, butter and milk. Mash until smooth. Use alongside your normal meal or even eat them by themselves.
