I need more of these meals in my life!

Here’s a strange fact: We went to Fresh Market on Tuesday ,spent a good chunk of money, and I’m still finding it hard to figure out what to make. I swear we bought nothing but, juice (Josh bought five containers of fresh pressed pomegranate juice), fruit, lettuce, cereal and two pounds of bacon. I should never go to the store without a plan. I will end up buying elements of a meal that just don’t go together.

So now I need a plan, because I ate out Wednesday night with my girlfriends, which is fine. I out breakfast out yesterday morning, which is not fine. And I made egg noodles with butter and parmesan last night for dinner. Also, not good.

And I need to learn how to soak beans. I know, put them in water and let them soak. But, mine took so long to get soft, they got moldy. How does one not know how to properly soak beans?

I want to go to the store today and not go again (except for fresh produce) for about two weeks. The next two weeks are going to be busy and I want to be ready with fresh, prepared food and a plan.

Tortilla Pie  I already have the polenta for this.

Scrambled Chickpeas and vegetables.

Roasted sweet potato meals.

The occasional breakfast plate with egg, bacon, toast and fruit.

Chinese inspired dishes like kung pao.

Chicken Fajitas.

More raw dishes and desserts.

Lots of chopped salads with my favorite dressing.

Food Journal and Menu Planner



One of the most important things that we can do for ourselves is to stay on track. This I have found is the toughest thing to ever do. We get so excited about making changes and then we realize that there are so many things to keep track of and it becomes very difficult.

I want to try and help you through this of course and one of the things that I have always found about Weight Watchers or Jenny Craig is the tracking and accountability to yourself. To try and help you through this I have created a food journal and found a menu planner that should help you.

Menu Planner

We try to do menu planning for our dinners every Sunday so that we can make sure that we can get our eating figured out for the weeks dinners. This is a job that my daughter and I have taken on after years and years of my wife figuring out and making dinners. This Menu Planner that I have here will help you by giving you space to decide what you are going to eat ahead of time so that you don’t just wing it (always bad).

Food Journal

I created this food journal so that you can track every day what you eat, and make sure that you track your water, fruits, vegetables, and protein. I have also added a couple of lines for energy and attitude (rate yourself on a scale of 1-10) and there is a bottom section that is to track your exercise. Remember this is for tracking. You can learn all over my blog what to eat and when but I will get into that again in another email for you. The last thing that I think is really helpful is journalling, Try and journal how you are feeling and what you did well or poorly with by just writing it on the back of the paper. Each page has three days worth so you will have to cut it in three.

Weekend Success

I’m up today and full of energy to get stuff done and prepare for a new week! Thank you so, so much again for your comments- there are some truly wonderful (intelligent, kind, thoughtful) people reading this blog and I’m so grateful for that. Truly thankful.

It’s Saturday morning and I don’t have a big post planned, but I have so much I want to do and want to share for a little bit of accountability.

Today I’m going to a seminar about local bee’s with a friend and then going to her house after. This will include a little bit of bridal shower planning that I’ve got going on.

But before that, I want to really get a lot done in the kitchen. My goal is to create an environment for weight loss success. This will involve cabinet organizing, and food prep. I dream of being able to reach in the refrigerator and have lots of fixings for a salad at my finger tips.

Todays exercise will involve a visit with Billy Blanks and tomorrow we’re headed to the gym for strength and the treadmill.

I want to do some menu planning for the week, some bread baking. I want a meal plan for the week and I want to make it as easy as possible for myself.

I want to start organizing the bedroom and start garden planning. Yes folks, this year (like the past two years) I’m going to have a successful garden. I will have a garden. I’m saying this over and over. I have NO idea how to garden and this is always so scary for me. I want to top this off by saying that I live in a town and I don’t have a lot of yard space for such adventures. BUT, we do have small spaces that can be turned into a garden. Urban gardening in a small town. I want to do this for the food, but also for the exercise and the feeling of making it happen. Eating food that we grew, there is some sort of satisfaction in that. So planning is happening. Planning and learning.

What else? I have some freelance work to finish, and some jewelry orders to get out. Other than that I want to catch up my reading, and relax a little too.
