Recipe: Zucchini and Feta Griddle Cakes for Two

Have you ever done something that later left you thinking “self, you’re awesome for doing that!”? Well, over the summer people were leaving zucchini at my doorstep and then running away. Not really, but that’s a better story than me feeling sorry for the unloved zucchini and bringing any and all that was offered to me into my home. I’m an adopter, that’s what I do.

I pulled out my food prossor and grated a few large zucchinis then put them in freezer bags for a later date. That later date came and I knew I needed to make zucchini cakes.  I also knew that the recipe should involve feta. Almost every recipe should involve feta in my opinion.

Zucchini and Feta Griddle Cakes (makes two)

Ingredients:

1 C grated and drained zucchini- 20 calories

¼ C crumbled feta – 90 calories

1 egg – 70 calories

½ t salt

1 clove of garlic minced (or garlic powder)

¼ C flour- 114 calories

2 t olive oil – 80 calories

Total calories: 374

Per serving: 187

Directions:

Squeeze excess water out of zucchini. Combine all ingredients except for the olive oil into a large bowl. Mix well with hands or a wooden spoon.

Pour olive oil in griddle and heat over medium for a couple of minutes. Divide zucchini mixture then form into two patties.

Cook on both sides for about two minutes. Or until the feta begins to melt.

Serve with greek yogurt, sour cream, or marinara sauce.

Enjoy! They tasted like fresh zucchini, but cake-like and tangy/salty from the feta. Definitely plan to make them again. Plus Josh loved them which is a bonus.

This program can work for someone if you need to Loose 10 to over 100 pounds! It is packed with vitamins, minerals and is a main ingredient of the 'super-health-food "soy.

I think it is particularly useful for those who have developed a disorder with food or obese.

Permanent weight loss?

You always hear that Medifast will inevitably make you gain your weight back. This is true for any program of weight loss. Let's stick to reality here. If we do not remain resolute and committed to taking care of our bodies then yes of course the weight back. Only with exercise, education on nutrition and love of life can we stay at a healthy weight. Medifast does not work for those who decide to work with her.

A DAY IN THE LIFE. .

Let me give you and example on a regular day on meals program should be 3-4 hours apart.

8:00 – I woke with a start, revived and ready for another day. I'm ready for lunch. Oatmeal great sound. . . especially with apples and cinnamon. The porridge is best mixed with 3 / 4 cup water (if you want to use a thickness of 1 / 2) and needs to clean house, but not high I add a packet of Splenda and vanilla extract that little "sticky" texture I want!

12:00 – I have a bowl of vegan chili with Medifast multigrain crackers (mixed with 1 cup of water and heated for 2 minutes to allow hot!) With bits of onion and celery mixed fresh for not mention a dash of garlic powder and paprika. Chile did not really need these supplements, but it is okay to add them if desired.

3:00 – I am a delicious bar butter peanut protein gives me a boost and makes me feel like I'm cheating!

6:00 – I decide to have a small meal "for dinner (you can eat the Medifast products or have only 1 meal a day in the guidelines). I turkey breast grilled with a couple cups of lettuce, some onions, fat free honey Dijon dressing, and another packet of biscuits.

9:00 – I have my last meal for the day. A treat of my favorites. Canfield's Chocolate Fudge soda mixed with a packet Medifast Chocolate Mocha, a packet of Splenda, and a hint of chocolate extract (which was jelly made earlier in the day). It tastes so good. . . like ice milk chocolate! Yum.

THE RUN-DOWN

Basically to wrap things in a nutshell. . . You can have 5 full day and a meal. You can also have two quick soups, which does not count as a supplement (beef, chicken, tomato) and up to 2 packets of biscuits. The Shakes (two different chocolate, vanilla, strawberry and orange), oatmeal, chili, creamy soups and snacks (peanut butter, Devine chocolate, chocolate mint, berries, lemon and oatmeal) are counted as extras. You can add small amounts of vegetable extracts and spices to one of the soups (chicken noodle, cream of tomato, chicken and broccoli) and pepper. You can also have any non-caloric drink all you want, but need to obtain at least 64 ounces of water per day. Coffee (milk can be used!) Is permitted but limited to three cups a day. For dinner, 3-4 oz lean meat (chicken, turkey, beef, pork, fish, shrimp) are authorized or in green lettuce (a couple of cups of lettuce stuffed allowed) with a few vegetables in salad and 2 tablespoons low-fat or fat free dressing. A cup or two other raw or cooked vegetables (green beans, broccoli, etc.) can substitute a salad.

Once you get into the swing of things, what are the foods you prefer, and establish a timetable. . . things are going well. The first three days of adjustment may have minor side effects such as headaches, fatigue and bad moods, but those first three days are worth a little discomfort review of the utility and how far you can go to healing of body and mind of obesity with this program.

Following a similar approach like this, anyone can lose weight with Medifast effectivly.
